Onion Jam

Ingredients

500g Red Onions, cut into rings

1 Bayleaf

100g Brown Sugar

25ml Red Wine Vinegar

50ml Beef Stock

Salt & Pepper

15ml Worcestershire Sauce

50ml BBQ Sauce

Method

  1. Sweat the onions until golden-brown in colour.
  2. Add the bayleaf, brown sugar, red wine vinegar and the Worcestershire sauce on low heat and leave for 5 minutes.
  3. Add the beef stock and leave for 30 minutes until the onions are tender.
  4. Finish off with the BBQ sauce for another 5 minutes.
