Krautsalat

Ingredients

1 pound green cabbage, in slivers (about half a small to medium cabbage) hand crushed and salted with 1,5 tsp salt for 45 minutes

100g bacon / cured ham

½ white onion

½ apple, julienned

1 tsp apple cider vinegar

2 tsp caraway seeds

1 Tbsp mustard (dijon style is good)

3 Tbsp sunflower seed, grape seed or canola oil

Method

  1. Start by curing the cabbage. To do this, cut half a small to medium cabbage into slivers and hand-crush it with half a tsp of fine sea salt. Let it sit for at least 45 mins.
  2. In the meantime fry the onion and bacon in a pan. Set aside.
  3. Put the apple cider vinegar, caraway seeds, mustard and oil into a jar. Close tightly and shake.
  4. When the cabbage has cured, add all the ingredients to the cabbage. Mix well and serve.
